Chicken Parmesan

ingredients

  • 1/4 C flour
  • 1/4 C grated Parmesan cheese
  • pepper
  • 4 skinless,boneless chicken breasts
  • 1 large egg white, lightly beaten
  • 1 Tbsp olive oil
  • Cooking spray
  • 3 C tomato sauce
  • 1 C shredded mozzarella cheese
  • 4 oz cooked linguine

    Preheat oven to 350°.

    Combine flour, Parmesan cheese, and pepper in a shallow dish.

    Flatten chicken breasts to 1/4 ". Dip into egg white; dredge in flour mixture.

    Heat oil in large non-stick skillet over med-hi heat. Add chicken and cook for 5 minutes on each side. Arrange chicken in a baking dish coated with cooking spray. Pour tomato sauce over chicken and sprinkle with mozzarella.

    Bake for 15 minutes.

  • 6

    Serve chicken and sauce over linguine.
