Peanut Butter Cookies
ingredients
- 1 cup unsalted butter
- 1 1/4 cups creamy peanut butter
- 1 cup white sugar, plus extra for dipping
- 1 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda

Cream together butter, peanut butter, and sugars. Beat in eggs. Stir in vanilla.

In a separate bowl, sift together flour, baking powder, baking soda, and salt.

(I didn’t sift and the cookies were fine! I did mix the dry ingredients really well, though.)

Stir into batter. Put batter in refrigerator for 1 hour.

Roll into 1-inch balls, dip one side of the balls in white sugar, and put on baking sheets with the sugar side up.

Flatten each ball with a fork.

Bake in a pre-heated 375 degree oven for 6 to 7 minutes or until cookies begin to brown.

Do not overbake.
