Egg Potato Casserole
ingredients
- Butter
- 1/2 cup snipped parsley-optional
- 2 cups chopped onions
- 2 1/2 lb potatoes, cooked then cut up into 1/4" slices
- 5 hard boiled eggs, sliced
- 1 tsp salt
- 1/2 tsp pepper
- 3 Tbsp flour
- 2 cups sour cream
- 1 1/2 cup grated cheddar cheese
- 1/8 tsp paprika
- 1 cup fresh bread crumbs
- 1 pkg brown-n-serve sausages-cooked

Saute parsley and onion in 1/4 cup butter.

In 9x13 pan arrange half of potatoes, cover with egg slices and onion.

Next layer the sausage and sprinkle with salt and pepper.

Top with rest of potatoes.

Sprinkle bread crumbs 1/2 cup grated cheese: dot with 2 Tbsp butter.

Bake 30 minutes at 325 degrees.

This recipe may be made up the night before or several hours before cooking and serving.
