Penne with Italian Sausage and Roasted Red Peppers
I based this on a recipe I had with chicken, broccoli and pasta. It is a quick weekday meal since it only takes about 20 minutes from start to finish. Serve with a green sald and a glass of red wine and you’ll feel like you are at your neighborhood Italian restaurant!
ingredients
- 2 Tbs. Extra Virgin Olive Oil
- 1 1/2 pounds Italian Sausage (sweet
- or hot or a combo)
- 1 28 oz can of plum tomatoes
- 2 cloves of garlic, minced
- 1 tsp salt
- 1 12 oz jar of roasted red
- peppers, sliced into strips.
- 1lb. of penne pasta, cooked and
- drained
- Freshly grated Parmesan Reggiano
