Penne with Italian Sausage and Roasted Red Peppers

I based this on a recipe I had with chicken, broccoli and pasta. It is a quick weekday meal since it only takes about 20 minutes from start to finish. Serve with a green sald and a glass of red wine and you’ll feel like you are at your neighborhood Italian restaurant!

ingredients

  • 2 Tbs. Extra Virgin Olive Oil
  • 1 1/2 pounds Italian Sausage (sweet
  • or hot or a combo)
  • 1 28 oz can of plum tomatoes
  • 2 cloves of garlic, minced
  • 1 tsp salt
  • 1 12 oz jar of roasted red
  • peppers, sliced into strips.
  • 1lb. of penne pasta, cooked and
  • drained
  • Freshly grated Parmesan Reggiano
