  • 1 9" unbaked pie shell, well chilled
  • 1 Tbsp. butter
  • 8 - 10 slices bacon, fry crisp, cubed
  • 4 eggs
  • 2 C heavy cream
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • Pinch: nutmeg, sugar, cayenne pepper
  • 1 C grated Swiss cheese

    Rub butter on surface of unbaked pie shell.

    Combine: eggs, cream, salt and spices with egg beater, just long enough to mix thoroughly.

    Sprinkle pie shell with bacon and cheese; pour in cream/egg mixture.

    Bake 425° for 15 min. Reduce heat to 300° and bake 40 minutes or until knife comes out clean.
