Veggie Soup

Makes 6 servings
ingredients
- 16 ounces chicken broth
- 8 ounces water
- 32 ounces veggie broth
- 1/2 container V8 juice
- 1 can diced tomatoes
- 1 1/2 medium yellow onions, diced
- 2 bay leaves
- 4 celery stalks, chopped
- 1 cup mushrooms, washed and sliced
- 1/2 cup carrots, diced
- 6 small Yukon Gold potatoes, diced largely
- 1 package California blend frozen vegetables
- salt and pepper to taste

1. Chop onions and celery.

2. Combine first 8 ingredients in large stock pot.

3. Add salt and pepper to taste.

4. Cover and let simmer for 1 hour.

5. Add mushrooms, potatoes, carrots, and frozen veggies. Simmer 20 minutes or until potatoes are softened.
