Veggie Soup

ingredients

  • 16 ounces chicken broth
  • 8 ounces water
  • 32 ounces veggie broth
  • 1/2 container V8 juice
  • 1 can diced tomatoes
  • 1 1/2 medium yellow onions, diced
  • 2 bay leaves
  • 4 celery stalks, chopped
  • 1 cup mushrooms, washed and sliced
  • 1/2 cup carrots, diced
  • 6 small Yukon Gold potatoes, diced largely
  • 1 package California blend frozen vegetables
  • salt and pepper to taste

    1. Chop onions and celery.

    2. Combine first 8 ingredients in large stock pot.

    3. Add salt and pepper to taste.

    4. Cover and let simmer for 1 hour.

    5. Add mushrooms, potatoes, carrots, and frozen veggies. Simmer 20 minutes or until potatoes are softened.
