PERFECT PIZZA

ingredients

  • Olive oil for coating or cornmeal for dusting
  • 1 cup homemade or store bought tomato sauce
  • 1 1/2 c grated Mozzarella Cheese
  • 1 1/2 c grated Muenster Cheese
  • Pizza Dough Recipe (see recipe)

    Prepare pizza dough as directed. Heat the oven to 450°. Punch down the risen dough, knead it a few times to remove all air, and divide it in two.

    On a lightly floured work surface, use a rolling pin to roll one portion into a 12” round. Place on a lightly oiled baking sheet, sprinkle some cornmeal onto a pizza peel and place the dough on the peel. Spread a thin layer of sauce onto crust (too much will make the pizza soggy). Top with both cheeses and garnish with the toppings of your choice. Bake 12-15 minutes (subtract a few minutes if using a pizza stone).

    When done, pizza will be golden underneath.

Spruce up store-bought sauce by adding 1 crushed garlic clove, 1½ T dry red wine and ½ t dried oregano
