Rice with Chicken, Peas, and Almonds
ingredients
- 1 medium onion, chopped
- 1/2 cup fresh parsley, finely chopped
- 4 Tbsp extra virgin olive oil
- 1 box Uncle Ben’s Herb Roasted Chicken flavored long grain and wild rice
- 1 lb chicken tenders, cooked and chopped or shredded
- 1 cup frozen peas, thawed
- 1/2 cup slivered almonds
- salt and pepper to taste

Cook rice per package directions. Put in large bowl when finished. While rice is cooking, chop pre-cooked chicken.

In a large saucepan, heat 2 Tbsp olive oil over medium heat, add onions and parsley and cook for 3 minutes.

Add chicken to the pan with remaining 2 Tbsp olive oil, season with salt and pepper. Add peas and almonds. Heat through until chicken is lightly browned.

Spoon chicken mixture into bowl with rice, mix and serve.
