Chili
ingredients
- 1 lb ground beef or turkey (optional)
- 1 Tbsp olive oil
- 2 cans Dark red Kidney beans(undrained)
- 1 small onion, chopped
- 1-2 Tbsp chili powder
- 1 tsp Basil
- 1 tsp Oregano
- 1-2 Tbsp sugar (to reduce acidity)
- 1 (12oz) can tomato paste
- 5 - 8 cups water (use beef broth for richer flavor; lessen water for thicker chili)

Heat oil in a large pan; add beef and brown. Transfer beef to stock pot or crock pot.

Sauté onion until softened. Remove from heat and add chili powder; add to pot.

Add tomato paste to pot; slowly add in water (broth) stirring constantly to avoid clumps.

Add beans to chili. Add sugar.

Cook on low 8-10 hours for crock-pot or 2-4 hours on stove-top. Refrigerate overnight for stronger flavor.

Variations: The following ingredients may be added to suit your liking. 1 chopped green pepper or 1 tsp cumin.

Top your chili with your favorite ingredients; shredded cheddar cheese, sour cream, chopped green onions, corn chips, or tortilla chips.

Serve with warm Sweet Cornbread or saltine crackers.
