Cut Potato Kootu
This is common chapathi side dish that we had growing up.
ingredients
- 1 large potato, diced finely
- 1 medium onion, chopped
- 1/2 medium tomato, chopped
- Spices:
- 1/2 tsp mustard seeds
- 1 pinch asafoetida
- 2 tsp chana dhal
- 1 tsp urad dhal
- 3 green chilis, whole
- 4-5 curry leaves
- 1 1/2-inch piece ginger (or finely chop)
- 1/4 tsp turmeric
- 1/2 tsp sambar powder or chili powder

1. Pop mustard seeds in oil. Add a pinch of asafoetida

2. Add dhals and cook until very light brown.

3. Add cut onions and tomatoes. Cook for 2-3 minutes.

4. Add green chilis, curry leaves (karuvaipilai), and ginger.

5. Add turmeric powder and sambar powder.

6. Cover and cook on low heat until onions are tender. Remove ginger piece.

7. Add cut potatoes.

8. Add water such that potatoes are submerged and cook (covered).

9. Add salt after 5 minutes or at the end.
