Freddie Frittata
ingredients
- 12 medium eggs, lightly beaten
- 2/3 C artichoke hearts, drained, cut into quarters
- 2-3 C vegetables of choice, such as spinach or sauteed mushrooms
- 1/2 lb of 1/2" cubes of jack, provolone, or cheddar cheese
- 1/2 C bread crumbs
- 1/4 C diced red bell peppers
- 2 T grated Romano or Parmesan cheese
- salt and pepper to taste
directions
Add the prepared ingredients to the beaten eggs.. Fold together until just evenly distributed. Do not over mix. Pour into a 10“ quiche dish or 9 X 12” Pyrex dish that has been sprayed with Pam. Set dish in a larger baking dish with water 1/2 way up sides. Bake 45 minutes at 375°. Check center of frittata for doneness. Serve cold, room temperature.
