Beef and Cheese Enchiladas

servings:Makes 8 enchiladas


  • 1 pkg. Lawrys enchilada sauce mix
  • 1-8 oz. can tomato sauce
  • 2 1/2 cups water
  • combine mix, tomato sauce and water in sauce pam. blend thoroughly. bring to a boil, reduce heat and simmer uncovered for 15 minutes. stirring occassionally. keep warm

    1 lb. ground beef

    12 oz. shredded cheddar cheese

  • 4

    8 corn tortillas

  • 5

    4 oz. shredded cheddar cheese

  • 6

    brown beef and drain off fat. cool. add 12 oz. cheese to meat. dip each tortilla into sauce mixture. place 1/2 cup meat mixture in center of each tortilla and roll up. place seam side down in 12x8x2 inch baking dish. pour remaining sauce over enchiladas. top with 4 oz. cheese. bake at 350 for 20 minutes
