Baked Stuffed Onions


Even people who don’t like onions, like this recipe.

  • 4 large Bermuda onions (about 3/4 llb. each)
  • 1 lb. sausage
  • 1/4 lb. butter
  • 1/4 cup chopped parsley
  • 2 1/2 cups water
  • 1 pkg. (8 oz.) stuffing mix
  • 2 chicken bouillon cubes

    Peel onions and cut in half cross wise. Remove center of onion, leaving about 1/2 " shell.

    Chop center of onion making 2 cups.

    In large skillet, cook chopped onion and sausage, stirring to break up meat.

    Add butter, parsley and 1 cup water.

    Heat until butter melts.

  • 6

    Stir in stuffing mix and spoon into onion shells mounding mixture up high and smoothing to edge.

    Place in backing pans and add the remaining water and bouillon cubes.

    Bake loosely covered with foil at 350 for 1 hour, 15 minutes until onion shells are tender.

    Baste once or twice during baking with pan liquids.
