Chocolate caramel cracker bars

  • 48-62 butter crackers (rectangular)
  • 1/2 c creamy peanut butter
  • 1 c. graham cracker crumbs
  • 1/3 c semisweet chocolate chips
  • 2/3 c. sugar
  • 1/3 c butterscotch chips
  • 1/2 c. brown sugar
  • 1/3 s dry roasted peanuts, chopped
  • 1 stick unsalted butter (1/2 C)
  • 1/4 c. milk
  • pinch of salt

    Coat a 13 x 9" pan with nonstick spray. Arrange 24-32 crackers in the dish.

    Boil graham cracker crumbs, sugars, butter, milk, and salt for about 3 min. until sugars melt. Stir constantly to prevent scorching. Pour sauce over crackers and spread evenly. Top caramel layer with another layer of crackers. Melt peanut butter, chocolate and butterscotch chips in a saucepan over medium-low heat until smooth. Drizzle over crackers and spread. Sprinkle with chopped nuts. let bars set for at least 2 hours.
