Macaroni & "Cheez"
A vegan recipe that wins rave reviews everytime. It is full of B vitamins due to the nutritional yeast flakes that give it it’s rich cheesy flavor.
ingredients
- 1/4 cup chopped onion
- 2 tbsp non-dairy margerine like Willow Run
- 1/2 cup unbleached white flour
- 5 1/4 cup water
- 3 tbsp low sodium soy sauce
- 2 1/4 tsp garlic powder
- 1/4 tsp turmeric
- 1 1/2 tsp sea salt
- 1/3 cup olive or soybean oil
- 1 1/2 cup nutritional yeast flakes
- 8 1/2 cup cooked macaroni

Sauté onion in margerine

Whisk in flour until smooth and bubbly

Whisk in water, soy, garlic, turmeric, and salt

Beat well until mixed smooth.

Cook until thickened.

Whisk in yeast and oil

Mix 3/4 of sauce with macaroni and put in casserole dish.

Pour the rest of the sauce over the top and sprinkle with paprika.

Bake at 350° for 15 min.

Place under the broiler until cheez is spotted brown.
notes
If you like it spicy, use hot Spanish Paprika to sprinkle on top. Mix in cayenne pepper, a small amount of salsa, fresh chopped jalapenos or a little of your favorite hot sauce. The top can also be sprinkled with buttered bread crumbs for a bit of crunch
