Mussels a la SweetBarn Farm
Serve these mussels in a very large bowl in the center of the table. Add plenty of napkins and bowls for the empty shells. Maybe a loaf of good bread to soak up all those juices.
ingredients
- PEI Mussels, as many as you need
- 1 large jar mild salsa
- 2-4 cloves garlic, depending on how many Mussels and how much garlic you like
- 1 cup of white wine
- Fresh herbs from the garden.

Clean all mussels. Discard any that are open.

Place the mussels in a large pot. Add garlic, wine and salsa. Cook for approximately 3 minutes, until the mussels have opened up. Discard any that don’t open.

Add chopped fresh herbs, serve hot.
notes
Use whatever herbs are available. Fresh parsley, dill, thyme, even cilantro would be great. If in doubt, start with a little and keep adding until you are happy with the taste.
