Ginger Soup with Scallops and Shrimp
Very simple soup that can use both scallops and shrimp or just one of them
ingredients
- 6 cups chicken stock
- 1/2 cup sliced, peeled ginger root
- 1-2 portobellos, sliced
- 8-10 shitake mushrooms, sliced
- 1/4 lb uncooked, with or without shells, shrimp (I didn’t have scallops, so used a full pound)
- 4-6 scallops
- 1/2 cup chopped green onion
- 1/3 cup chopped cilantro, or dried to taste

1. Bring stock to a gentle boil. Add slices of ginger.

2. Simmer ginger for five minutes. Remove ginger from broth.

3. Add mushrooms and simmer for five more minutes.

4. Add salt to taste, if needed.

5. Add shrimp and simmer one minute.

6. Add scallops and simmer just one more minute then turn off heat.

7. Add green onions and cilantro when serving.
