Ginger Soup with Scallops and Shrimp

Very simple soup that can use both scallops and shrimp or just one of them

ingredients

  • 6 cups chicken stock
  • 1/2 cup sliced, peeled ginger root
  • 1-2 portobellos, sliced
  • 8-10 shitake mushrooms, sliced
  • 1/4 lb uncooked, with or without shells, shrimp (I didn’t have scallops, so used a full pound)
  • 4-6 scallops
  • 1/2 cup chopped green onion
  • 1/3 cup chopped cilantro, or dried to taste

    1. Bring stock to a gentle boil. Add slices of ginger.

    2. Simmer ginger for five minutes. Remove ginger from broth.

    3. Add mushrooms and simmer for five more minutes.

  • 4

    4. Add salt to taste, if needed.

  • 5

    5. Add shrimp and simmer one minute.

  • 6

    6. Add scallops and simmer just one more minute then turn off heat.

  • 7

    7. Add green onions and cilantro when serving.
