Jenny's Pork Schnitzel
ingredients
- 6-8 thin cut boneless pork loin or chop
- 4 eggs
- 1/4 cup milk
- 1 cup garlic & herb or Italian bread crumbs
- kosher salt to taste
- fresh ground pepper to taste
- other spices of choice to taste
- canola oil

Pound pork until very thin and tender and set aside.

Mix eggs and milk in a shallow dish, beat and set aside.

Mix bread crumbs and spices in another shallow dish, mix and set aside.

Meanwhile, add enough canola oil in a large skillet to cover the bottom of the pan and fry one side of the pork.

Heat to a medium to medium high temperature. Be careful not to heat to high or the pork will burn and cook too fast.

Place pork, one at a time, in the egg/milk mixture, then straight into the bread crumb mixture and pat lightly onto both sides of the pork so it’s covered completely with the bread crumbs.

Carefully place each piece of pork into the skillet and cook for a few minutes on each side until light to medium brown. Adjust heat if needed and don’t let the pork get too dark. This will cook quickly because the pork is so thin.

Remove from skillet onto a plate lined with two paper towels, to remove excess oil.

Immediately put onto a plate and serve warm.
notes
*Add a slice of lemon onto the plate when serving, if desired.
