Curry Flavored Fried Rice
ingredients
- 2 cups steamed rice, refrigerated the night before
- 1 lb shelled and deveined shrimp
- 2 eggs
- 1/2 of an onion
- 1 cup frozen diced carrots and peas (or any veggies you like)
- 1 tsp chopped garlic
- 1/2 tsp salt
- 1 tsp chicken bouillon
- 1 tsp curry powder
- 2 tsp light soy sauce
- 1 Tbsp vegetable oil, divided
- Chopped fresh cilantro or parsley
- Green onion, about 1 stalk, sliced

Prepare the shrimp and season with salt, pepper and a little dash of curry powder for flavor. Chop the onion and mince the garlic. Prepare and thaw the carrots and peas according to the instructions. Beat eggs in a bowl and season with salt and pepper.

In a wok or large frying pan, heat 1/3 Tbsp oil in a wok or a large frying pan over high heat. Scramble the eggs and spoon them aside.

Heat the remaining oil and then add garlic and onion in the pan and saute. Add carrots, peas and shrimp in the pan and saute. Add rice in the pan and mix the ingredients together.

Sprinkle salt, chicken bouillon and curry powder over the fried rice and stir quickly.

Turn the heat down to low and add soy sauce. Stir quickly and stop the heat.

Sprinkle chopped cilantro and green onions to add color and flavor. Add freshly ground pepper to add more heat.
