Chicken Ignolia

  • 3½ lbs. chicken, preferred bone in but boneless works

  • ⅓ C olive oil

  • 1 T. lemon juice

  • ¼ C white wine

  • 2 T. Romano cheese

  • 2 T. Parmesan cheese

  • ¼ t. oregano

  • ¼ t. basil

  • ½ small bay leaf, crushed

  • 1 crushed clove garlic

  • ½ t. salt

  • pepper

  • 1. Place chicken in a single layer in a baking dish just to fit.

  • 2. Mix ingredients and pour over chicken.

  • 3. Bake at 350° for 1¼ hours. Baste often.
