3½ lbs. chicken, preferred bone in but boneless works
⅓ C olive oil
1 T. lemon juice
¼ C white wine
2 T. Romano cheese
2 T. Parmesan cheese
¼ t. oregano
¼ t. basil
½ small bay leaf, crushed
1 crushed clove garlic
½ t. salt
pepper
1. Place chicken in a single layer in a baking dish just to fit.
2. Mix ingredients and pour over chicken.
3. Bake at 350° for 1¼ hours. Baste often.
