Grilled Garlicky Fish
ingredients
fish- 1 garlic clove, pressed
- 2 Tbsp. olive oil
- 1 tsp. fresh thyme, chopped
- 1 tsp. lemon zest
- 1 1/2 lb. halibut or other white meaty fish, 1 inch thick
- salt
- fresh ground pepper
- vegetable oil for grill rack
- 3 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 1 garlic clove, pressed
- 3 Tbsp. chopped parsley
- 1/2 tsp. salt
- red peper flakes

In a small bowl, stir together the garlic, oil, thyme, lemon zest and a few grinds of pepper. Place the fish in a shallow glass or ceramic dish and rub it on both sides with the garlic mixture. Cover and refrigerate at least one hour or up to overnight.

Meanwhile, make the garlic sauce. In a small bowl, whisk together the oil, lemon juice, garlic, parsley, salt, and pepper flakes to taste. Set aside until serving, then taste and adjust the seasoning.

Prepare a medium hot fire in a charcoal or gas grill. Make sure the grill rack is clean, then oil it and let the oil burn off for 5 minutes. Season the fish on both sides with salt. Place on the grill rack and cook, turning once, until browned on both sides and almost cooked through, 4-5 minutes on each side. Transfer to a platter and let rest for 5 minutes, as it will continue to cook off the grill. Serve with the sauce immediately.
