Lisa's Potato Salad
ingredients
- 6-8 red potatoes
- 2 hard boiled eggs
- 3-6 crispy slices of bacon crumbled
- 1 C. mayonnaise
- 1-2 tsp. dried dill
- 1 tsp. celery salt
- Paprika to taste
- 1-3 Tbs white vinegar
- 1 tsp. sugar

SOOOOOO you cut up the potatoes (notice Dan Quayle and I put an “e” in there) into bite size pieces, throw them in a pan of cold water and bring to a boil. Boil for 15-20 minutes, put a fork into them and see how hard or soft they are. Try not to let them get too soft or else you will end up with mash potato salad.

While the potatoes (there’s that “e” again) are cooking mix the mayo, dill, celery salt, and vinegar (paprika if wanted) together. Start with 1TBS of vinegar and adjust to taste. I like more vinegar in mine. This is where I adjust the amount of seasonings in there because if you don’t like it you can always start over and make more without ruining the potatoes. When you have a taste you like add the bacon (you can never have too much bacon) and eggs and mix.

When the potatoes are done cooking, run them under cold water to stop the cooking process and refrigerate. When potatoes are cool, mix them with the dressing and voila!
