Curry Greek Yogurt Wild Rice Salad w/Spinach
ingredients
- 1 cup greek yogurt
- 4 cups cooked wild rice
- 1 cup dried fruit
- 1 cup green onions
- 1 cup chopped pecans
- 1 tsp curry
- 2 tbsp sugar
- 2 cups spinach
- salt, pepper, dried parsley to taste
directions
Cook wild rice as directed on package, drain and chill. Chop onions, pecans, and dried fruit. Mix curry, mayo, salt, pepper, and parsley in small bowl. Add chilled rice, onions, spinach, fruit, and pecans. Toss.
