Crabcakes

Makes 16 crabcakes

ingredients

  • 1 1/2lb crab (fresh maine red crab)
  • 1 Tbsp red pepper- freshly diced
  • 1 Tbsp green pepper- freshly diced
  • 1 Tbsp yellow pepper- freshly diced
  • 1 Tbsp freshly diced parsley
  • 3 Tbsp onion freshly diced, sautéed (can add cream)
  • 1/2 cup seasoned bread crumbs
  • 1/2 cup Parmesan
  • 1 egg
  • 6 drops tabasco
  • 2 Tbsp lemon juice
  • 1 Tbsp Mayo or cream
  • (Can also add 1 Tbsp Dijon mustard to onion & cream mixture, then add onions.)

    Mix ingredients & shape into 16 cakes. Sauté in clarified butter.

    Serve with lemon butter.
