Sue Ann's Huevos Rancheros
Sue Ann prepared this wonderful dish for Yvonne, Ray and I while visiting us in Costa Rica Nov.2009
ingredients
- 2 Tbs.Olive Oil
- 1 Medium Onion (chopped)
- 4 Red Bell Peppers (chopped)
- 1/2 Jalapeno Pepper (chopped)
- 4 large cloves Garlic (chopped)
- 1 cup Mexican Tomato Sauce
- 2 tsp. Chili Powder
- 1 or 2 Tomatoes sliced, to cover pan
- 8 Eggs
- Jack or Cheddar Cheese (grated)

Saute Onion in Olive oil

Add Bell Peppers and Jalapeno, saute

Add Garlic, saute
- 4
Add Mexican Tomato Sauce, Chili Powder, and sliced Tomatoes and cook a few minutes.

Add Eggs and cover and poach until done.

Add Cheese, cover until melted.
