Sue Ann's Huevos Rancheros

Sue Ann prepared this wonderful dish for Yvonne, Ray and I while visiting us in Costa Rica Nov.2009

ingredients

  • 2 Tbs.Olive Oil
  • 1 Medium Onion (chopped)
  • 4 Red Bell Peppers (chopped)
  • 1/2 Jalapeno Pepper (chopped)
  • 4 large cloves Garlic (chopped)
  • 1 cup Mexican Tomato Sauce
  • 2 tsp. Chili Powder
  • 1 or 2 Tomatoes sliced, to cover pan
  • 8 Eggs
  • Jack or Cheddar Cheese (grated)

directions

  • 1

    Saute Onion in Olive oil

  • 2

    Add Bell Peppers and Jalapeno, saute

  • 3

    Add Garlic, saute

  • 4

    Add Mexican Tomato Sauce, Chili Powder, and sliced Tomatoes and cook a few minutes.

  • 5

    Add Eggs and cover and poach until done.

  • 6

    Add Cheese, cover until melted.
