Bimuelos de Matzo / Matzo PancakesMarilyn Landau
As far as Gabe and Lauren are concerned, this dish is good any time of year, not just for Passover!
- total time:
- 30 minutes
- 2 cups matzo farfel
- 3 large eggs
- pinch of salt
- oil for frying
- 1 cup sugar
- 1 cup water
- 1 teaspoon lemon juice
Wet matzo farfel and drain. Add eggs and salt. Heat oil to medium heat and drop batter by large spoonfuls into frying pan. Place on paper towels to absorb oil. After frying can dip immediately in prepared syrup. Remove and sprinkle with chopped nuts. Serve hot!
Personally I like these dipped straight into sugar which provides a nice texture.

If matzo farfel is not available you can use crumbled up matzos. Similar to matzo brei but fried. We all know that everything tastes great when fried!
