Chicken Breast Crusted with Pecan Crust
This is an eloquent dish, great for a dinner party.
ingredients
- 2 whole large chicken breasts, boned and each cut in half.
- 2 TBSP. maple or maple flavored syrup
- 1 3 oz can pecans (1 cup) chopped
- 3 Tbsp all purpose flour
- 1 tsp salt
- 2 Tbsp butter or margarine (1/4 stick)
- 2 Tabs salad oil

Pound chicken breasts to 1/4 in thick

Brush chicken breasts halves with maple syrup

On waxed paper, combine chopped pecans, flour and salt. Coat chicken breasts completely with nut mixture

In a 12 in. skillet over medium heat, heat butter and salad oil until butter melts; add chicken breast; cook 12 to 15 minutes, turning chicken once and adding more salad oil if needed, until chicken is browned on all sides and fork tender.
