Egg and Sausage breakfast pie
Because “real men don’t eat quiche.”
ingredients
- 1 pound browned ground pork breakfast sausage (Jimmy Dean or the like)
- 4 eggs
- 1 cup half-and-half
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella
- 1 9-inch pie crust

Pre-bake the pie crust so it is slightly crisp and no longer dough-y...but not yet browned.

Put browned sausage on bottom of pie crust.

In separate bowl, lightly whip together eggs, half/half, and parmesan. Pour over sausage in pie crust. Top with mozzarella cheese. Bake at 350 until cooked through.

This can obviously be modified to be lighter...but this heavier version holds up well as a dinner main dish served with a salad.
