Eggplant Parmesan
ingredients
- 1 Med. Eggplant
- 2 eggs, slightly beaten
- 1 C. Bread crumbs
- 1/3 C. Oil
- 1 Jar Spaghetti Sauce
- 1 lb. Mozzarella cheese, sliced
- 1/2 lb. ground beef, optional
directions
Cut eggplant into 1/2" slices; dip in egg and bread crumbs and fry till crisp in oil. Place slices of eggplant in casserole dish. Cover with sauce than sliced cheese. Bake at 350° for 20-30 minutes. Browned ground beef can be added to sauce if wanted.
