Quiche Lorraine
Chris Skebo brings this to pool luncheons-so good!
ingredients
- Pastry for 1 9" pie crust
- 12 slices (1/2 pound) bacon crisply fried and crumbled
- 1 cup (about 4 oz) shredded natural Swiss cheese
- 1/3 cup minced onion
- 4 eggs
- 2 cups whipping cream or half and half
- 3/4 tsp salt1
- 1/4 tsp sugar
- 1/8 tsp cayenne pepper

Heat oven to 425*. Prepare pastry. Sprinkle bacon, cheese and onion in pastry-lined pie pan. Beat eggs slightly; beat in remaining ingredients. Pour cream mixture into pie pan. Bake 15 min.

Reduce oven temperature to 300* and bake 30 min.longer or until knife inserted 1" from edge comes out clean. Let stand 10 min. before cutting.

Delicious with a muffin or fruit/nut bread and a tossed salad or fruit salad.
