Zucchini Relish

Diane’s Favorites
ingredients
- 10 cups ground zucchini
- 4 cups ground onions
- 5 tbsp salt
- 2 1/2 cups cider vinegar
- 5 cups sugar
- 1 tbsp dry mustard
- 1/2 tsp black pepper
- 1 tbsp tumeric
- 1 tbsp corn starch
- 1 tbsp nutmeg

Combine zucchini, onions and salt. Let stand overnight. Drain and rinse.

Combine all ingredients and cook slowly until clear, about 40 minutes.

Seal in hot jars at once.
notes
Do not use yellow onions. When doubling, add at least 3 cups sugar extra.
