ROSEMARY-ROASTED LOIN OF PORK
In Italian it is Arista di Maiale, and it is very good
- 1 cup diced fresh fennel bulb & fronds
- 2 garlic cloves, peeled
- 4 sprigs of fresh rosemary
- 3 tbs of extra virgin olive oil
- Salt & freshly ground pepper
- 1 3 pound boneless center rib roast of pork
- 1/2 cup diced carrots-1/4"
- 1/2 cup diced celery-1/4"
- 1/2 cup roughly chopped onions
- 2 1/2 cups chicken stock or canned broth-low sodium
