  • 1 cup diced fresh fennel bulb & fronds
  • 2 garlic cloves, peeled
  • 4 sprigs of fresh rosemary
  • 3 tbs of extra virgin olive oil
  • Salt & freshly ground pepper
  • 1 3 pound boneless center rib roast of pork
  • 1/2 cup diced carrots-1/4"
  • 1/2 cup diced celery-1/4"
  • 1/2 cup roughly chopped onions
  • 2 1/2 cups chicken stock or canned broth-low sodium
