Yummy, Healthy Muffins

Makes 2 1/2 small muffins

These muffins are healthy and delicious! The best part -- you can whip up the batter and keep it in the fridge while you make smaller portions!

ingredients

Wet Ingredients
  • 1 cup skim milk
  • 1 cup lowfat plain yogurt
  • 1/4 cup vegetable oil
  • 1/4 cup dark molasses
  • 2 eggs
  • 1 cup shredded carrots
  • 1/2 cup unsweetened applesauce
  • 1 cup mashed banana
  • 1/2 cup unpacked brown sugar
  • 4 teaspoons baking soda
Dry Ingredients
  • 2 3/4 cups whole wheat flour
  • 2 1/2 cups all bran cereal
  • 1 cups raisins, dried cherries
  • 1 1/2 teaspoons cinnamon

    Mix wet ingredients. In a separate bowl mix together dry ingredients. Combine the two and let batter sit in the fridge for at least 12 hours. Bake at 375 - 22 minutes for small muffins, 30 minutes for large muffins.

    Batter can be chilled in the fridge for up to 3 weeks.
