ORZO & SPINACH SALAD WITH LEMON VINAIGRETTE
A very refreshing salad!
ingredients
VINAIGRETTE- 1 garlic clove, minced
- 1/3 C olive oil
- 1 tsp grated lemon zest
- salt & freshly ground black pepper to taste
- 3 Tbl fresh lemon juice
- 8oz Orzo
- 3/4 C dried cranberries
- 8 oz baby spinach (I use lots of spinach)
- 3/4 C sugared pecans halves
- 5 oz feta cheese, crumbled
- 5-6 Tbl sugar
- 1 C pecans halves

Mix vinaigrette ingredients together well.

In a large bowl, combine the cooled orzo with spinach, cranberries, & feta. Pour vinaigrette over everything and mix.

Cover and chill a few hours or up to overnight.

Just before serving add pecans and toss. Taste to see if it needs more lemon juice, salt & pepper, or anything else.
SUGARED PECANS
Put the sugar in the bottom of a skillet. Turn stove to medium/low. Scatter the pecan halves over the sugar. Stir occasionally as the sugar melts. Once they are coated with sugar and toasted, remove them from the skillet to cool.
notes
You can simplify things by purchasing candied Pecans from Trader Joe's.
