Tangy Chicken Salad
ingredients
- 1/4 c white wine vinegar
- 2 tbsp water
- 1 tbsp extra virgin olive oil
- 1/8 tsp salt
- 1/4 tsp black pepper
- 8 c torn romaine lettuce
- 12 oz shredded chicken breasts (roasted and skinned)
- 2 c. diced tomato
- 1 can whole kernel corn (8 oz) drained
- 1/4 c crumbled blue cheese
- red onion slices
directions
Combine first 5 ingredients in small bowl and stir well with a whisk. Arrange lettuce, chicken, tomato and corn among 4 plates. Drizzle with 2 tbsp dressing and sprinkle with blue cheese. Garnish with onion if desired.
