Tangy Chicken Salad

Makes 4 servings

ingredients

  • 1/4 c white wine vinegar
  • 2 tbsp water
  • 1 tbsp extra virgin olive oil
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 8 c torn romaine lettuce
  • 12 oz shredded chicken breasts (roasted and skinned)
  • 2 c. diced tomato
  • 1 can whole kernel corn (8 oz) drained
  • 1/4 c crumbled blue cheese
  • red onion slices

directions

Combine first 5 ingredients in small bowl and stir well with a whisk. Arrange lettuce, chicken, tomato and corn among 4 plates. Drizzle with 2 tbsp dressing and sprinkle with blue cheese. Garnish with onion if desired.
