DIJON SCALLOPED POTATOES

A creamy and colourful recipe for cheesy potatoes. With sweet and white potatoes and lots of buttery flavour with a golden crumb topping.
ingredients
- 2/3 cup chopped onion
- 2 tsp canola oil
- 1 can (14-1/2oz) chicken broth
- 2 packages (3oz each) cream cheese, cubed
- 1 tbsp dijon mustard
- 3 medium russet potatoes, peeled and sliced thinly
- 2 medium sweet potatoes, peeled and sliced thinly
- 1 1/2 to 2 cups crushed butter flavoured crackers
- 3 tbsp grated parmesan cheese
- 2 tbsp butter, melted
- 2 tsp minced fresh parsley

1. In a dutch oven, saute onion in oil until tender. Reduce heat to medium; stir in the broth, cream cheese and mustard until blended. Remove from the heat. Stir in the potatoes.

2. Transfer to a 13“ x 9” baking dish coated with cooking spray. Combine the crushed crackers, parmesan cheese and butter; sprinkle over the top.

3. Bake, uncovered, at 350 for 50-60 mins or until potatoes are tender. Sprinkle with parsley. Let stand for 10 mins before serving
