Eclair Custard Filling and Icing
This is a yummy custard and icing for the eclairs.
ingredients
- Filling:
- 1 Qt. Milk
- 3 T. Sugar
- Pinch of Salt
- 1 tsp. vanilla
- 1 egg
- 5 T. Cornstarch
- Icing:
- 1 Sq. of Dark Chocolate
- 3/4 C. Confectioners Sugar
- 1 T. water

Filling:

Mix first 4 ingredients and heat over med. high heat on stove. Add lightly beaten egg. Continue to stir. When heated start adding cornstarch gradually until custard is thickened. Chill and fill eclairs.

Icing:

Dissolve confectioners sugar with 1 T. water. Add chocolate square and heat until all is melted. Take off stove and cool to room temperture. Ice filled eclairs and put into refrigerator. Serve.
