Wine Glazed Duck
ingredients
- 1 young duck, 2 1/2 - 3 1/2 lbs.
- 1 tsp. onion salt
- 1/2 tsp. paprika
- 1/4 tsp. ground ginger
- 1 c. wine, preferably rose
- 1/3 c. sugar
- 1/3 c. firmly packed brown sugar
- 1 T. orange juice
- 1 tsp. cornstarch
- a few sprigs watercress

By Robyn: I would never use rose wine for anything, not even to drink! Use a cabernet. Also, use more orange juice, shredded orange peels and currants in sauce to drip over duck.
