  • 2 pounds unpeeled, large fresh shrimp
  • 1/4 cup butter
  • 1 small red onion, chopped
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup chopped green bell pepper
  • 4 garlic cloves, minced
  • 2 cups fresh or frozen sliced okra or
  • zucchini, aspoaragus or any veggies
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons salt
  • 1 (10 3/4-ounce) can cream of shrimp or chicken soup
  • 1/2 cup dry white wine
  • 1 tablespoon soy sauce
  • 1/2 teaspoon cayenne pepper
  • 3 cups cooked long-grain rice
  • 1/4 cup grated Parmesan cheese
  • Garnishes: quartered lemon slices, fresh flat-leaf parsley sprigs
