FRIED SEAFOOD
If you want seafood that is tender and juicy on the inside and crunchy and crispy on the outside, make the coating mix according to the recipe below. Then follow the frying instructions. There is none better.
ingredients
- 2 cups yellow corn meal
- 1 cup fish fry
- 1/2 cup corn starch
- 2 Tbs onion powder
- 1 Tbs garlic powder
- 3 tsp salt
- 1 tsp cayenne pepper
directions
For Ingredients;
Mix all ingredients together in a large bowl until they are thoroughly blended. Then taste the mixture and readjust the salt and pepper, onion, and garlic powder according to your taste. You should be able to taste a hint of each.
For Frying Fish:

Wet fish fillets with water (do not use egg wash)

Roll thoroughly in the coating mix.

Do not fry right away. Let rest for about 3 or 4 minutes so the coating adheres to the fish.

If you try to fry too soon the cornstarch will not have time to bind the mixture and the coating will fall off in the pan as you fry.

Pour 2 cups of high quality vegetable or peanut oil into preheated skillet.

Bring the oil temperature up to 350°.

Drop in fillet (4 to 6 oz) and fry for 2 minutes on the flat side, 1 minute on the round side, and back on the flat side for another minute. Larger fillets will have to be cooked slightly longer.

This coating mixture is excellent for fried crawfish tails, oysters, shrimp and softshell crabs also.
