Broccoli n' Cheddar "Quiche"
ingredients
- 1 10oz package frozen chopped broccoli
- 3 cups shredded cheddar cheese (12oz)
- 2/43 cup chopped onion
- 1 1/3 cups milk
- 3 eggs
- 3/4 cup Bisquick baking mix
- 3/4 tsp salt
- 1/4 tsp pepper
directions
Heat oven to 400°. Grease pie plate, 10 x 1 1/2 inches. Rinse broccoli under running cold water to thaw; drain thoroughly. Mix broccoli, 2 cups of cheese, and onion in the pie plate. Beat milk, eggs, baking mix, salt, and pepper until smooth, 15 seconds in a blender on high or 1 minute with hand beater. Pour into pie plate. Bake until knife inserted in the center comes our clean, 25-35 minutes. Top with the remaining cheese. Bake just until the cheese is melted, 1-2 minutes longer. Cool 5 minutes.

This recipe is also good with cut-up cooked chicken, just add 1 1/2 cups of chicken. There are many other variations you can make of this easy version of quiche.
