Salt and Pepper Shrimp
ingredients
- 1/2 tablespoon kosher salt
- 1/2 tablespoon freshly ground black pepper
- 1 tablespoon peanut oil
- 2 large cloves garlic, chopped fine
- 1/2 piece of fresh ginger, peeled and chopped fine
- 1 bunch green onions (scallions), white and light green parts only, cut into 2" lengths
- 1 pound large raw shrimp (the 3 1/40s are perfect size; use the shell-on, deveined, easy-peel type, but do not peel them

In a small bowl, mix the salt and pepper together and set aside. Turn on the fan above your stove, heat a wok or pan until really, really hot and smoking, and then add the oil. Wait until the pan begins to smoke even more, then add the garlic, ginger, green onions, and shrimp. Stir often until the shrimp are almost fully cooked, which should not take more than a couple of minutes. Then add the salt and pepper. Stir quickly to coat all of the shrimp in the salt and pepper mixture. Remove from the pan and serve (with a small bowl for the shells.)
