Cupcakes
  • 3 c. cake flour
  • 3/4 c. butter
  • 1/2 c. water
  • 3 egg whites
  • 3 tsp. baking powder
  • 1 2/3 cups sugar
  • 1/4 tsp. almond
  • 3/4 c. pecans, finely chopped
  • 1 tsp. salt
  • 3/4 c. milk
  • 1 tsp vanilla
  • Sift together flour, baking powder, salt. Cream butter and add sugar, creaming well.
  • Combine milk, water, flavorings; add to butter mixture alternately with flour mixture, blending well each time. Add pecans. Beat egg whites stiff; fold carefully into batter. Bake in a greased muffin for 25 mins. at 350 ° For a 9x13 cake, bake longer
Frosting
  • 2 c. powdered sugar
  • 2 T. milk
  • 1/4 tsp. almond
  • 1/4 c. butter
  • 1 tsp. vanilla
