State Fair Cupcakes
ingredients
Cupcakes- 3 c. cake flour
- 3/4 c. butter
- 1/2 c. water
- 3 egg whites
- 3 tsp. baking powder
- 1 2/3 cups sugar
- 1/4 tsp. almond
- 3/4 c. pecans, finely chopped
- 1 tsp. salt
- 3/4 c. milk
- 1 tsp vanilla
- Sift together flour, baking powder, salt. Cream butter and add sugar, creaming well.
- Combine milk, water, flavorings; add to butter mixture alternately with flour mixture, blending well each time. Add pecans. Beat egg whites stiff; fold carefully into batter. Bake in a greased muffin for 25 mins. at 350 ° For a 9x13 cake, bake longer
