Totilla Soup

ingredients

  • 1 Tbspn olive oil
  • 1 small onion diced
  • 2 cloves garlic diced
  • 2 chicken breast cubed
  • 1 medium zucchini diced
  • 1 cup frozen yellow corn
  • 1 can stewed tomatoes
  • 1 can tomato sauce
  • 1 can low fat low sodium chicken broth
  • 2 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • Salt and Pepper to taste
  • Monterey jack cheese shredded
  • Fresh cilantro (optional)

    In a large saucepan over medium heat heat olive oil and saute onions and garlic for 3- 5 Min’s until onion is tender (Do Not brown). Add zucchini, Corn,tomatoes, tomato sauce and chicken broth. Stir to combine. Add seasoning, cumin and oregano. Reduce heat and simmer for 30 - 45 min

    To serve ladle into soup bowls and top with tortilla and cheese and fresh cilantro
