Homemade Meatballs with Sauce
One of Mary’s favorite Birthday dinners!!!
ingredients
Meatballs- 2 # ground beef
- 1c. unseasoned bread crumbs
- 3/4 c. Romano or Parmesan cheese, finely grated
- 1/2 c. milk
- 1/2 c. low-sodium beef broth
- 1/2 c. chopped fresh Italian parsley
- 3 eggs, beaten
- 2 T. dried oregano
- 1 T. garlic, mined
- 1 T. kosher salt
- 1 T. ground black pepper
- 2 tsp. dried basil
- 1 tsp. crushed red pepper flakes
- cans (14 1/2 oz each) whole plum tomatoes, crushed
- 1/2 c. reserved MB pan drippings
- 1/2 c. minced fresh Italian parsley
- 1 T. sugar
- 1 tsp. crushed red pepper flakes
- salt to taste

Mix all the above ingredients in large bowl for meatballs, then add

Shape meatballs into a 2” ball. (I used an ice cream scoop) Coat cookie sheet with non-stick spray,

and line with meatballs. Pour 1 C. of beef broth over MB, and bake in a preheated over @ 450* for about 25 minutes

(or until MB are cooked all the way through

For Sauce
- 7
Saute 1 1/2 C. of diced yellow onion in 1/4 c. Olive oil, until onions are translucent (4 min.)

Stir in 2 tsp. minced garlic (1 min.)

Add ingredients for sauce

Simmer MB in sauce to combine the flavors.
