Parchment Packet Potatoes
ingredients
- small 3-4 red potatoes -- washed & halved
- 2 tablespoons onion -- thinly sliced
- 2 cloves garlic -- peeled
- 1 sprig fresh rosemary -- or 1/2 t dried
- 2 tablespoons olive oil
- 1 tablespoon shredded Parmesan cheese
- pepper to taste
- 12 x 12 square of baker’s parchment paper
directions
Preheat oven to 350 degrees.
Fold paper in half diagonally so it is a triangle and crease it. Open up and put the potatoes right next to the crease in a compact pile in the center. Put on the garlic cloves, sprinkle the onion on top. Drizzle the olive oil over all then place the rosemary on the very top. Grind pepper to taste on it, then fold the top of the paper over to form the same triangle as in the beginning. Fold and roll up the edges of the packet so you have a half-circle when done and the packet is tight and won’t leak. Place on a cookie sheet and bake for 40 minutes. Take out and place on individual plates. Cut an “X” in the parchment and pull open a bit. Serve.
