Chicken Cheese Steaks
Cheesy, yummy, garlicky chicken cheese steaks with colorful peppers and onions.
ingredients
- 1lb chicken breast cutlets
- 2T olive oil
- 4 cloves garlic, minced
- 1 red pepper, halved and thin sliced
- 2 bell peppers, red/yellow, thin sliced
- course salt and ground pepper
- 6-8 oz. provolone cheese
- any super soft sandwich rolls
- mayonnaise

Cover baking sheet with foil. Preheat broiler with rack set 1 1/2 inches below heat.

Drizzle baking sheet with 1 T of olive oil and spread chicken cutlets out, turning over to coat. Season w/salt and pepper. Broil chicken w/out turning, 5-7 minutes or until cooked through. Remove chicken from baking sheet to cutting board, let cool and slice thinly.

On same baking sheet, mix garlic, onion, peppers and last T of olive oil. Broil veggies for 7-8 min., turning several times, until crisp cooked.

Add sliced chicken to veggies and toss to combine. Cover with cheese and broil just until cheese is bubbly. 1-2 min.

Scoop out part of insides of sliced sandwich rolls. Spread w/ mayo. Fill sandwiches w/cheesy chicken and veggies and serve immediately.

Wash your knife and cutting board and throw away the foil on the baking sheet and clean-up is done!!
