  • 2 MED ONIONS, CHOPPED
  • 2 CLOVES GARLIC, MINCED
  • 1/4 C BUTTER
  • 1 1/2 LBS. MUSHROOMS, CHOPPED
  • 1 CAN BEEF BROTH
  • 1/4 C RED WINE
  • 1 1/2 C HALF & HALF
  • 1 TSP SALT
  • 1/2 TSP PEPPER
  • 1/2 TSP FINES HERBS
  • 1 TSP FRESH PARSLEY, CHOPPED

MELT BUTTER IN LARGE SOUCEPAN. ADD ONIONS & GARLIC AND COOK TIL SOFT. ADD ALL MUSHROOMS AND CONTINUE COOKING ABOUT 8-10 MINUTES, STIRRING OCCASIONALLY. ADD SOUP, CREAM AND WINE AND HEAT. IF THICKER SOUP IS DESIRED, YOU CAN THICKEN WITH A LITTLE CORN STARCH IN WATER.
