Goat Cheese Quiche with Hashbrown Crust

  • 2 Tb softened butter
  • 1 lb hash browns
  • 12 eggs
  • salt and pepper
  • 1 1/2 c light sour cream
  • 4-5 oz goat cheese softened
  • 4 scallions

    1) Preheat oven to 375. Brush springform with butter. Line sides only with wax paper to same height as the pan.

    2) Combine hashbrowns, 1 egg, salt and pepper. Pat onto bottom with measuring cup and pat onto sides. Bake for 20 min.

    3) In lg bowl whisk sour cream, goat cheese, butter and salt. Add 11 eggs and whisk together. Pour into crust and bake until set and top with scallions(about 50 minutes).
