Dominican Red Beans

The most amazing beans you’ll ever have. A family recipe, full of Dominican flavor.
ingredients
- 1 can red kidney beans, including liquid (can use fresh if desired)
- 1/2 cup of water
- 1 tbsp tomato paste
- 1/2 small yellow onion, chopped
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, in large chunks
- cilantro, chopped coarsely (more is better)
- 2 tsp oregano
- 2 tsp garlic powder
- 1 tsp vinegar
- olive oil

Drizzle the bottom of a pan with olive oil. Heat the pan on medium heat. Cook chopped onions and bell peppers for a few minutes, until onions start to sweat. Add tomato paste, oregano, garlic powder, and vinegar, and give the mixture a quick stir just until the tomato paste is evenly distributed.

As soon as the tomato paste is evenly distributed, add the red kidney beans (with liquid) to the pot. Stir until all the ingredients are well distributed throughout the liquid. Add 1/2 cup of water to reach desired consistency (optional).

Right before serving, add chopped cilantro and stir into the beans. Serve on top of rice, or (if you added a lot of water) as a salad dressing on top of mixed greens and tomatoes.
